Love, love, love this cookbook. All of the recipes I have tried have been super easy, super delicious, and incredibly healthy. A few of my favorites include the peanut noodles, the eggplant "light", the spinach and mushroom risotto, and the fish tacos and avocado recipes. Looking forward to trying more.
I like this cook book. however I found the statement regarding a glutenFree diet ( No scientific evidence that a gluten free diet is healthier) to be just plain wrong! Plenty of science out there to support a GF diet.
